Cottage cheese muffins

Ingredients

1 1/2cupsflour, all-purpose
1/2teaspoonbaking powder
1/2teaspoonbaking soda
1/2teaspoonsalt
1/4cupmargarinesoftened
3/4cupsugarbrown, packed
1eachegglg
1cupcottage cheese (low-fat 1%)
1/4cupmilk, skim

Directions

1. In med. bowl, combine flour through salt.

2. In large bowl, cream together margarine and sugar. Beat in egg. Add cottage cheese and milk until smoth. Add dry ingredients and stir just until moistened.

3. Fill sprayed muffin tins 3/4 full, and bake at 375F for 20 mins.
